raspberry vanilla cream pie

Today we’ve had another celebration in our household. Yes, we love celebrations of all sorts 😊

So, we celebrated Iver’s homecoming after finishing his one year duty at the Norwegian army. We also kinda pre-celebrated his 20th birthday this upcoming week.

And because we are in the middle of the raspberry season and because Eirun and I picked some huge buckets of raspberries in the forest yesterday – what better to serve for the celebration than raspberry- vanilla cream pie.

Ok, I admit we had raspberry cream cake and some chocolate mousse too ….

but today I’ll share the super yummy raspberry vanilla cream pie with you.

Idag har vi feiret litt her hjemme hos oss.

Vi liker feiringer og finner stadig gode anledninger. Idag syns vi anledningen var ekstra god; Iver er ferdig med ett år førstegangstjeneste i Forsvaret …. og at han fyller 20 neste uke. Hurra!!

Og hva passer vel ikke bedre midt i bringebærsessongen ( – og etter at Eirun og jeg plukket 7 liter bringebær i skogen igår -) å lage en skikkelig god bringebær pai.

Ok, jeg innrømmer at vi hadde bringebær- bløtkake og sjokolademousse også …. men, idag deler jeg altså oppskrift på den aller beste bringebær-paien

INGREDIENSER

Mørdeig:

150 g smør

1 dl kokkossukker (Eller økologisk rørsukker)

1½ ts vaniljesukker

2½ dl hvetemel

1 dl kokosmasse

1 ts kanel

Fyll:

3 dl Vaniljekrem (Jeg har brukt ferdig piano vaniljekrem men du kan selvsagt lage din egen)

5 dl bringebær

2 ss sukker

1 ss potetmel eller tapioka

1 ts vaniljesukker

Fremgangsmåte

• Sett ovnen på 200°C.
• Bland raskt sammen alle ingrediensene til mørdeigen, gjerne i en foodprosessor.
• Trykk ut 3/4 av deigen i en smurt paiform, 24 cm i diameter.
• Legg resten av deigen i kjøleskap så lenge.
• Stek paibunnen på nederste rille i ovnen i 6-7 minutter.

• la paibunnen avkjøles litt.

• ha vaniljekremen i paibunnen og bre den utover med en skje.

• Strø bringebær jevnt utover vaniljekremen i paiskallet.
• Bland sammen sukker, potetmel ( du kan bruke maizena eller tapioka istedet) og vaniljesukker, og strø blandingen over bærene i paiskallet.
• Kjevle resten av deigen tynt ut på bakebordet. Lag remser, gjerne med en bakespore eller rull tynne pølser og klem dem flate, og legg dem som et rutemønster over bærene.
• Stek paien i nedre delen av ovnen i ca. 20 minutter på 180 grader.

• la paien “sette seg” og hvile minst 15-20 minutter før servering.

Ingredients

CRUST:

150 grams butter

100 ml shredded coconut

250 ml all purpose flour

100 ml coconut sugar or organic sugar

1 teaspoon cinnamon

1 1/2 teaspoon vanilla extract (or vanilla sugar)

FILLING:

300 ml vanilla cream (I’ve used store bought vanilla cream for this pie, but you can make your own if you prefer)

500 ml fresh raspberries

2 tbsps sugar

1 tbsps cornstarch, potatostarch or tapioca

1 teaspoon vanilla extract

• Bring all the ingredients for the crust together in a blender. Blend well.

• Add 3/4 of the crust to a wellgreased pai dish. (Put rest of crust in the fridge).

• I use my fingertips and the heal of my hand to flatten the crust and press it into the dish. (The dish should be aprx 240mm wide)

• Bake the crust at 200 degrees Celsius for 7 minuets.

• Let the crust cool down.

• add the vanilla cream to the crust.

• add raspberries to the top of the crust.

• blend starch, sugar and vanilla well and sprinkle over the raspberries.

• use the rest of the crust and make thin strips and add to the top of the pie.

• bake at 180 degrees Celsius for 20 minuets.

• let the pie set for at least 15-20 minuets before serving.
